Soup.

The soup was OK last night. John thought the veggies needed more cooking (I put them in raw, contrary to much advice, but I was not longer up to cooking over a stove at that point). The veggies went in about four hours before serving, and I thought they were fine.

It wasn’t “oh wow!” soup. But it was OK. I stuck it in the fridge last night– we’ll see how it is this morning.

    Err…. recipe (kinda):

    about 1 cup vegetable broth
    1 turnip
    2 white carrots
    1 beet
    1 onion
    1 leek
    2 cups water
    1 tbsp. crushed garlic
    salt, pepper, oregano leaves

    Chop above and put in crock pot on high for about 6 hours. Add 1 bay leaf and continue to heat for another 2-4 hours.

    Turn down to low and let sit overnight.

    In the morning, strain the soup and set aside the broth. Toss the veggies into compost– they have given their all.

    Put stock back into crock pot.

    In frying pan, melt about 2 tbsp margarine and add 2 tbsp flour, whisking into a roux (sorta). Slowly add broth, a ladel-full at a time, until it’s a thick gravy. Remove from heat for about 5 minutes so it cools to the same temperature as the crock pot.

    Put roux gravy into crock pot and stir. Turn crock pot to high.

    In same pan you made the roux in, and before washing, brown up some steak chunks– I used beef tenderloin cuts. Brown for about 5 minutes or so. Add 1 cup of the broth to the steak, let it kind of “deglaze” the pan, and pour everything into the crock pot.

    Boil 2 servings of barley on the stove in more water than you need for about 30 minutes. Pour off the excess water until it’s at the same level as the barley, but still “soupy.” Add to crock pot.

    Let sit for about 3 hours. Then add:
    1 turnip, chopped
    1/2 onion, chopped
    16 baby orange carrots, chopped
    1 white carrot, chopped
    2 tbsp salt
    Optional: 1-2 white potatoes (these would have greatly improved this stew).

    Put veggies into stew. Optionally, you can lightly steam them before you put them in– I think that would have helped a bit. Let sit in crock pot for about 4 hours. Serve.
