Dangit

So, I thought that since John is staying at home to do taxes today, that means I can go play (write) tonight cause I won’t have to pick him and the dog up.

But then John remembered that I have to sign those pesky tax forms before he mails them in. Whoops.

So, he might pop up here tonight for a quick visit and signing before mailing them off.

Fajitas!

There’s a reason I don’t have a “chef” userpic. It’s because I rarely get creative enough in the kitchen to warrant posting about it. In fact, I rarely do anything in the kitchen besides dishes.

But last night was an exception. John was really wiped out when we got home, and I had energy to spare (I was bouncing around the car shouting “Family Fiesta Night!” to give you some idea). So I offered to make dinner. On our menu: beef fajitas. Which weren’t defrosted (ugh). Anyway, I defrosted the meat while doing the dishes, then made a little fiesta marinade out of balsamic vinegar, olive oil, tabasco, and spices (mostly garlic powder and “mexican seasoning”). I marinaded the meat while chopping the veggies– half a red pepper, half an orange pepper, and half a white onion. I sautee’d the beef and veggies separately, adding some seasonings to the peppers and onions when I started, and about 2 tbsp of the meat juice when it was at the “cooked but rare” stage. I removed the meat wehn there was still a couple of tbsps of fluid at the bottom of the pan and tossed it in with the peppers and onions. Meanwhile, I’d chopped up some iceberg and heated the fajita tortillas. Got out the salsa and sour cream and made a quick addition by grating a little cheddar.

I thought they were very good fajitas. John agreed, and I’m sure it wasn’t just because he didn’t have to cook them.

There’s a MacNTouch for a 15 inch Ti Powerbook for $5 (starting auction price), in case anyone on my Friends list is interested and could use it (it won’t fit the 12″ or 17″ Powerbooks).
