So, I had my Thanksgiving Day menu planned out last week, then talked to my brother. He wants to add creamy spinach dip (because I guess veggies, stuffed mushrooms, and deviled eggs aren’t enough appetizers?), creamy mashed potatoes, and some additional dessert.
We compromised on the dessert– cheesecake, since I’m a cheesecake-hater.
I’m going to call tonight and ask him to not make the potatoes, though, and to let me do it using one of the low-fat recipes I’ve found. I might even make them garlic mashed, so that I won’t feel any need to put gravy over them (and they’ll go better with the ham anyway).
2 halves of deviled eggs: 2 pts.
Bunch o’ cut veggies: 0- .5 pts.
1/2 cup apple-raisin stuffing: 2 pts.
1 dinner roll, with non-butter: 3 pts.
2/3 cu. Garlic mashed potatoes: 2 points.
Steamed green beans: 0 pt.
1 cup Steamed squash/beets: 1 pt.
1/4 cup canned pineapple: 1 pt.
1 slice ham: 3 pts.
1 slice pumpkin pie: 3 pts.
Whipped cream: 1 pt.
Total: 18 points. Not bad for a mega-meal like Thanksgiving.
